This Creamy Vegan Ranch Dressing Has Everyone Eating More Salads

This is my go to dressing that has helped everyone I know eat more salads. It has all the delicious flavors and creaminess of a ranch dressing minus the dairy. So if you are someone who can’t have dairy, give this one a try. Your tastebuds will be thanking me for it.
I’ve provided 2 versions of this recipe below. Both are absolutely scrumptious, one is just packed with the flavor of fresh ingredients while the other is deliciously perfect if you need a quick and easy dressing.
Recipe 1 (Fresh Ingredients)
Ingredients
- 1 cup raw cashews (soaked for 2 hours or more, then drain)
- 1/2 small onion
- 1 TBSP fresh dill (this is on the stronger side so, adjust to your preference)
- 1 medium sized garlic clove
- 1/4 cup fresh Parsley (I recommend starting with 1/8 cup and slowly add more until you get your desired flavor)
- Juice from 1 lemon or 1/2 of a medium lemon
- 1 1/2 – 2 cups of water (depending on how thick you want the dressing)
- Sea salt to taste
Instructions
Add all ingredients and 1 1/2 cups of water to a high speed blender and blend until smooth. If needed add the remaining 1/2 cup of water until you get the consistency you prefer. Use more water if needed.
Recipe 2 (Quick & Easy)
Ingredients
- 1 cup of raw cashews
- 1 1/2 tsp of onion powder
- 1 1/2 tsp of dried dill
- 1 1/2 tsp of dried parsley
- 1 medium sized garlic clove
- Juice from 1 small lemon or 1/2 of a medium lemon
- 1 1/2 – 2 cups of water (depending on how thick you want the dressing)
- Sea salt to taste
Instructions
Add all ingredients and 1 1/2 cups of water to a high speed blender and blend until smooth. If needed add the remaining 1/2 cup of water until you get the consistency you prefer. Use more water if needed.
