Sides are actually a great place to sneak in vegetables! In fact, I love turning sides into main dishes. Here are a few delicious thanksgiving sides to try. Maybe you will also find them to be delicious enough to have them as main dishes!

Root Vegetable Gluten Free Stuffing

So I’ve searched and searched but could not find a stuffing recipe that wasn’t filled with bread. Not that there’s anything wrong with bread but for my chronically ill besties this can be difficult to digest. Here’s a recipe that is not plant based but with a few modifications it can be.

modifications:
  • Omit the sage pork sausage, and use either more button mushrooms or any variety of mushroom you liked. I think lentils would also be a great substitute.
  • Leave out the oil for an oil free version and use water or some sort of vegetable broth to sauté the vegetables instead.
  • If you are like me and prefer a more savory stuffing, omit the apples.
