Inside Style Card: Thanksgiving Mains

Just because you are eating more nutrient dense foods, doesn’t mean you have you skip out on the Thanksgiving Feast. There are so many delicious recipes filled with vegetables. Some of them even include fruits.
Here are some great recipes to try for your thanksgiving main dishes.
Lentil Vegetable Loaf

It’s hearty and has all the flavors of thanksgiving, making it a delicious main dish that everyone will enjoy! The wonderful thing about this dish is that it is free of gluten, oil, soy, corn, nuts, seeds, fats, and refined sugar. Oh and I highly recommend making 2 batches of the sauce. Trust me you’ll thank me later.
Stuffed Acorn Squash

This one not only tastes delicious but looks so beautiful on a plate. It’s perfect to wow your thanksgiving guests.
modifications:
- Wild rice gives all the thanksgiving vibes but you can also use quinoa instead. Feel free to use whatever grain you desire.
- You can make this oil free by omitting the olive oil. Instead, brush the inside of the acorn squash with coconut aminos, that helps to keep the squash from drying out. Plus it gives it a nice flavor.
- Use water to sauté the vegetables. Cook as normal but just add a little bit of water to the pan to prevent the vegetables from sticking.
- Omit the olive oil in the dressing to make it oil free. It won’t be as thick and creamy but it will still taste delicious.
Pumpkin Pasta Bake

If you need something easy to make, this recipe is for you. This is an oil free dish, and can be nut free check out my modifications below. It has sage and rosemary in it which always reminds me of the holidays.
modifications:
- Instead of almond milk, oat milk to make it nut free and fat free.
- Use cauliflower breadcrumbs for the crunchy bits on top to add an extra vegetable.
Stuffed Butternut Squash with Quinoa Salad

The colors of the pomegranates and kale in this dish always get people going “Ooohhh” and “Ahhhh”. There are so many textures and flavors packed in this dish. I mean everything about it says, “It’s FALL”.
Modifications:
- Use coconut aminos instead of olive oil to brush on the butternut squash. That way there’s less fat in the dish.
- Water sauté the vegetables instead of using olive oil. This is just another way to lower the fat content.
Lentil Shepard’s Pie

There’s something so comforting about a Shepard’s Pie. It just makes me want to sit by the fire and snuggle under a soft fluffy blanket. This recipe is vegan and also free of gluten, soy, corn, oils, nuts, seeds and refined sugar. It’s clean, filling, and delicious. Enjoy!
